Mexican Chicken Soup Recipe

- 1 medium sweet potato, peeled and cubed;
- 2 tbsp Paleo cooking fat;
- 2 tbsp extra-virgin olive oil;
- 1/2 onion, sliced;
- 4 cloves garlic, minced;
- 1/4 tsp ground cumin;
- 4 cups chicken stock;
- 1/2 roast chicken, shredded;
- 1 cup cherry tomatoes, halved;
- 2 tbsp fresh cilantro, finely chopped;
- juice of 1/2 lime;
- 1/2 ripe avocado, sliced;
- Sea salt and freshly ground black pepper to taste;
